- 2 1/4 c. flour, sifted
- 1 1/2 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs, well beaten
- grated rind of 1 lemon
- 1 Tbsp. rich milk or cream
Directions

1Sift flour once; measure.

2Add baking powder and nutmeg, then sift together twice.

3Cream butter, adding sugar gradually, until light and fluffy.

4Add eggs, lemon rind and cream or milk; beat well.

5Roll into a thin sheet on slightly floured board.

6Cut with floured cutter and dredge with sugar.

7Bake in a 400° oven for 7 minutes.

8This makes 2 1/2 dozen cookies, 3-inches in diameter. These may also be cut into fancy shapes and sprinkled with colored sugar.
