- 1 qt. brown sugar
- 11 qt. coarse salt
- 1 small box cayenne pepper
- 1 lb. black pepper
- hams or shoulders
Directions

1Place hams or shoulders into tub; rub mixture of ingredients into meat for about 5 minutes.

2Let lay 2 or 3 days, then wrap meat in paper.

3Put in brown paper bag and put in cloth bag with hock end down and hang.

4(Be sure the hock end is down when you hang the meat.)

5Makes enough for 10 hams.
