Ingredients

  • 1 c. flour
  • 2 tsp. Sweet 'N Low or 1/2 c. Sprinkle Sweet
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. soda
  • 3/4 c. oats
  • 1 egg
  • 2 Tbsp. butter
  • 1/2 c. milk
  • 1 c. mashed bananas or 1 c. applesauce
  • 1 tsp. vanilla
  • 1/4 c. nuts (optional)

Directions

    Sift flour, sweetener, baking powder, salt and soda and mix with oats.

    Melt butter in pan.

    Add milk, egg, mashed bananas or applesauce, vanilla and nuts (if desired).

    Pour wet mixture into dry mixture and stir lightly.

    Bake at 400° for 20 to 25 minutes. Makes 12 muffins.
