  • 3 c. unsalted peanuts
  • 1 egg white
  • 1 Tbsp. orange juice or water
  • 2/3 c. sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground allspice
  • 1/4 tsp. salt

Directions

    Heat oven to 375°.

    In a large bowl, place nuts; set aside. In a small bowl, beat egg white and orange juice or water until frothy.

    Add sugar, spices and salt; mix well.

    Pour over nuts, stirring to coat well.

    On a greased jelly roll pan or large shallow roasting pan, spread nuts so they do not touch.

    Bake, stirring every 15 minutes, until light brown and crisp, 45 to 55 minutes.

    Cool.

    Store in an airtight container in a cool place up to 1 month.

    Makes about 5 cups.
