Ingredients
- 3 c. unsalted peanuts
- 1 egg white
- 1 Tbsp. orange juice or water
- 2/3 c. sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground allspice
- 1/4 tsp. salt
Directions

1Heat oven to 375°.

2In a large bowl, place nuts; set aside. In a small bowl, beat egg white and orange juice or water until frothy.

3Add sugar, spices and salt; mix well.

4Pour over nuts, stirring to coat well.

5On a greased jelly roll pan or large shallow roasting pan, spread nuts so they do not touch.

6Bake, stirring every 15 minutes, until light brown and crisp, 45 to 55 minutes.

7Cool.

8Store in an airtight container in a cool place up to 1 month.

9Makes about 5 cups.

10When placed in decorative container, they make a great gift.
