Sugared Nuts

Ingredients

  • 2 1/2 c. nuts (pecans, walnuts or almonds; have used all three)
  • 1 c. water
  • 1 1/2 c. sugar
  • 1 tsp. vanilla

Directions

    Put the sugar in an aluminum or enamel pan (not Teflon).

    Add water and stir; bring to boil.
  3. 3
    Reduce heat so that mixture boils, but not furiously.

    Stir constantly until mixture forms a soft ball in cold water.

    Add shelled nuts, stirring gently.

    Stir until evaporation reduces the liquid to zero and nuts crust. Sprinkle vanilla over nuts.

    Stir until pan is dry and nuts are dry.

    Spread nuts on cold cookie sheet (I put down wax paper) and let cool before packaging.
