Sugared Rum Balls

  • 1/2 cup Land O Lakes Butter, melted
  • 1/4 cup rum*
  • 2 tablespoons honey
  • 2 cups crushed vanilla wafers
  • 1 cup finely chopped pecans
  • 1/2 cup sweetened flaked coconut
  • 3 tablespoons unsweetened cocoa
  • White coarse or sparkling decorator sugar

Directions

    Combine butter, rum and honey in large bowl; mix well.

    Add vanilla wafers, pecans, coconut and cocoa; stir until well mixed.

    Shape rounded teaspoonfuls of dough into 1-inch balls.

    Roll in sugar.

    Store refrigerated in container with tight-fitting lid up to 3 weeks.

    Roll in sugar again before serving.

    Serve in paper or foil candy cups.

    *Substitute 1/4 cup water plus 1 teaspoon rum extract.
