  • 1 can (6 oz.) orange juice concentrate, thawed
  • 2 large eggs
  • 2 large ripe bananas, mashed
  • 2 c. self-rising flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 4 Tbsp. raisins

Directions

    Combine juice concentrate with mashed bananas and eggs and beat until fluffy.

    Stir dry ingredients together and add to the first mixture.

    Stir in raisins.

    Spoon into 18 muffin cups lined with cupcake papers.

    Bake in preheated 350° oven about 15 minutes or until a pick comes out clean.
