Ingredients
- 1 c. all-purpose flour, sifted
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1/8 tsp. ground ginger
- 1 egg
- 2 tsp. sugar substitute (8 Sweet 'N Low packets)
- 1/2 c. water
- 1 Tbsp. vegetable oil
- 1/2 tsp. vanilla
Directions

1Sift dry ingredients together.

2Beat egg and add water, sugar substitute, oil and vanilla.

3Stir into dry ingredients.

4Divide batter equally into eight fluted paper baking cups placed in muffin tin.

5Set muffin tin in a shallow pan of water and cover with an inverted cake pan.

6Bake in a preheated 350° oven for 20 minutes.

7Remove pan cover and bake 5 more minutes.

8Makes eight.
