  • 1 cup oil
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 5 -6 apples, peeled, cored and cut into small chunks
  • optional- 1/2 cup chopped nuts

    Beat eggs well.

    Gradually add sugar and oil.

    Add dry ingredients and mix well.

    Fold in apples (and nuts if using).

    Bake in greased 9x13 or bundt pan, at 350 degrees for about 1 hour, or until tester comes out clean.

    Cool in pan before slicing or unmolding.
