  • 4 medium size yellow squash, cut in 1/4-inch slices
  • 1/3 c. chopped onion
  • 2 hard-cooked eggs
  • 1 c. corn chips, crushed
  • 1/3 c. butter, melted
  • 1/2 c. cubed Cheddar cheese

    Cook squash in a small amount of boiling water until tender, but still crisp; drain.

    Saute onion in butter; add squash, stirring to mix.

    Spoon mixture into lightly greased quart baking dish.

    Layer with eggs, then cheese, then corn chips.

    Bake at 350° for about 15 minutes or until cheese melts.
