- 4 medium size yellow squash, cut in 1/4-inch slices
- 1/3 c. chopped onion
- 2 hard-cooked eggs
- 1 c. corn chips, crushed
- 1/3 c. butter, melted
- 1/2 c. cubed Cheddar cheese
Directions

1Cook squash in a small amount of boiling water until tender, but still crisp; drain.

2Saute onion in butter; add squash, stirring to mix.

3Spoon mixture into lightly greased quart baking dish.

4Layer with eggs, then cheese, then corn chips.

5Bake at 350° for about 15 minutes or until cheese melts.
