Ingredients

  • 4 c. sliced fresh okra
  • 3 c. cubed green tomatoes
  • 2 large raw potatoes, cubed
  • 1 medium onion, cubed
  • 3 c. corn meal mix
  • 1 c. flour
  • peanut oil
  • pepper and salt to taste

    Chop all vegetables and mix in a large bowl until all are moist (you may need to add

    2 or 3 tablespoons water).

    Put corn meal and flour into a large paper grocery bag.

    Add vegetables (1/3 at a time) and shake until coated.

    Fry in hot peanut oil until crisp.

    (Deep fryer works well.) Drain well.

    Summer squash is good in this too.
