  • 3 to 4 medium tomatoes
  • 1 small to medium onion (preferably Vidalia)
  • 1 to 2 green peppers
  • any other veggies (optional)
  • 1/3 c. canola oil
  • 1/3 c. balsamic vinegar
  • 1/8 c. sugar or to taste
  • 1 tsp. pepper
  • 1 tsp. garlic
  • 1 Tbsp. ketchup

Directions

    In medium bowl mix canola oil, balsamic vinegar, sugar, pepper, garlic and ketchup.

    Cut vegetables into bite size pieces and stir into mixture.

    Serves 4 to 6. Best when chilled.
