Summer Soba Salad

  • 2 whole Medium Zucchini
  • 4 whole Small Bell Peppers
  • 1/3 whole Medium Red Onion
  • 4 cups Water
  • 8 ounces, weight Soba Noodles
  • 1/2 cups Teriyaki Sauce
  • 1 Tablespoon Sesame Seeds, For Topping (optional)

Directions

    Wash and chop the zucchini, peppers and onion into bite-sized pieces.

    In a covered medium saucepan, bring the water to a boil. Remove from the heat, add the noodles and allow to cook for 5 minutes.

    Drain the noodles and rinse in cold water until the noodles are cool to the touch.

    Toss the soba noodles, vegetables and sauce, then top with sesame seeds.
