- 2 whole Medium Zucchini
- 4 whole Small Bell Peppers
- 1/3 whole Medium Red Onion
- 4 cups Water
- 8 ounces, weight Soba Noodles
- 1/2 cups Teriyaki Sauce
- 1 Tablespoon Sesame Seeds, For Topping (optional)
Directions

1Wash and chop the zucchini, peppers and onion into bite-sized pieces.

2In a covered medium saucepan, bring the water to a boil. Remove from the heat, add the noodles and allow to cook for 5 minutes.

3Drain the noodles and rinse in cold water until the noodles are cool to the touch.

4Toss the soba noodles, vegetables and sauce, then top with sesame seeds.
