Ingredients
- 1 large or 2 small cucumbers, peeled, seeded and finely diced
- 3 bunches scallions (green onions), finely diced (white part only)
- 1 green bell pepper, finely diced
- 3/4 c. low-fat plain yogurt
- 1/2 c. imitation sour cream
- 2 cubes chicken bouillon, crushed
- salt and white pepper to taste
Directions

1Place all the ingredients in a blender or food processor. Process until smooth.

2Chill for at least 2 hours.

3Yields 2 or 3 servings.
