Summer Squash

  • 1 1/2 lb. yellow summer squash, cut into slices
  • 1 can water chestnuts, sliced and drained
  • 1 can cream of chicken soup
  • 3/4 c. sour cream
  • 1 medium onion, diced
  • 1 carrot, grated
  • 1 1/2 c. cracker crumbs
  • 1 stick margarine

Directions

    Pour squash slices into boiling water.

    Cook 2 minutes and drain.

    Mix squash, chestnuts, soup, sour cream, onion and carrot together.

    Pour in 1 large or 2 small casserole dishes.

    Brown the cracker crumbs with margarine and sprinkle over squash mixture. Bake at 350° for 1 hour.
