- 1 1/2 lb. yellow summer squash, cut into slices
- 1 can water chestnuts, sliced and drained
- 1 can cream of chicken soup
- 3/4 c. sour cream
- 1 medium onion, diced
- 1 carrot, grated
- 1 1/2 c. cracker crumbs
- 1 stick margarine
Directions

1Pour squash slices into boiling water.

2Cook 2 minutes and drain.

3Mix squash, chestnuts, soup, sour cream, onion and carrot together.

4Pour in 1 large or 2 small casserole dishes.

5Brown the cracker crumbs with margarine and sprinkle over squash mixture. Bake at 350° for 1 hour.
