Summer Squash Casserole(Microwave)

- 6 c. yellow summer squash
- 1/4 c. chopped onion
- 1 can cream of chicken soup
- 1 c. dairy sour cream
- 1 c. shredded carrots (2 medium)
- 1 (8 oz.) pkg. Stove Top (chicken flavor)
- 1/2 c. margarine or butter
Directions

1Place squash and onion in 3-quart casserole.

2Cook just until tender-crisp (5 minutes), covered.

3Drain.

4Combine soup and sour cream.

5Stir in carrots.

6Fold into drained squash and onion. Combine stuffing mix with butter or margarine.

7Spread 1/2 of stuffing in 7 x 11-inch baking dish.

8Spoon vegetable mixture over top.

9Sprinkle remaining stuffing over vegetables.

10Cook 7 to 10 minutes or until heated through.
