Summer Squash Casserole(Microwave)

  • 6 c. yellow summer squash
  • 1/4 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. dairy sour cream
  • 1 c. shredded carrots (2 medium)
  • 1 (8 oz.) pkg. Stove Top (chicken flavor)
  • 1/2 c. margarine or butter

Directions

    Place squash and onion in 3-quart casserole.

    Cook just until tender-crisp (5 minutes), covered.

    Drain.

    Combine soup and sour cream.

    Stir in carrots.

    Fold into drained squash and onion. Combine stuffing mix with butter or margarine.

    Spread 1/2 of stuffing in 7 x 11-inch baking dish.

    Spoon vegetable mixture over top.

    Sprinkle remaining stuffing over vegetables.
