Summer Squash Pasta

Ingredients

  • 1 lb. summer squash
  • 1 lb. zucchini
  • 2 cloves garlic
  • 1 large onion
  • 1/2 Tbsp. crumbled Feta
  • olive oil
  • salt and pepper
  • 1 lb. angel hair pasta

Directions

    Cut zucchini and squash into fourths lengthwise, then into 1/2-inch sections crosswise.

    Dice onion; mince garlic.

    Fry onion in enough oil to keep it from sticking.

    Add garlic when onion is soft.

    Then add squash.

    Cook on medium heat, stirring occasionally, until mixture collapses and becomes soft.

    Remove from heat and add cheese, the salt and pepper to taste (cheese is quite salty).

    Serve over or mix into pasta adding more olive oil as needed.

    Serve with green salad if desired.
