Summer Squash Relish

Ingredients

  • 10 c. coarsely ground squash
  • 4 c. chopped onions
  • 3 Tbsp. salt
  • 2 or 3 c. water
  • 2 1/2 c. white vinegar
  • 5 c. sugar
  • 1 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 tsp. dry mustard
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 1/2 tsp. pepper
  • 4 red peppers, coarsely ground and rinsed
  • 4 green peppers, coarsely ground and rinsed

    Mix squash, onions and salt well and let set overnight.

    Drain in morning; rinse with water.

    Add remaining ingredients.

    Mix well; cook 15 minutes.

    Seal in jars.

    Hot water bath 5 minutes.
