Summer Squash Surprise

Ingredients

  • yellow summer squash
  • onion, diced
  • chicken soup
  • 8 oz. sour cream
  • salt and pepper
  • dash of nutmeg
  • 1/2 stick butter
  • prepared stuffing
  • Parmesan cheese

Directions

    Slice squash and cook with onion (just to crisp; drain, if necessary).

    Mix chicken soup, sour cream, salt, pepper and nutmeg.

    Melt butter and pour over 1/2 package of dressing.

    Save some to sprinkle on top.

    Place dressing in bottom of casserole dish.

    Add squash and onions.

    Top with sour cream mixture. Sprinkle with reserved dressing and Parmesan cheese, if desired. Bake at 350° until hot through.
