Ingredients

  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 Tbsp. margarine
  • 2 c. diced fresh tomatoes
  • 2 c. zucchini, sliced
  • 1 c. frozen or fresh corn
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 2 Tbsp. flour
  • 2/3 c. evaporated milk

Directions

    In a saucepan, cook onion and pepper in margarine until limp. Add tomatoes, zucchini, corn, salt, sugar and pepper.

    Heat until vegetables are tender.

    Combine flour and milk until smooth.

    Stir into hot mixture.

    Boil and stir 1 minute.

    Pour into a baking dish and top with French fried onion rings.

    Brown briefly under the broiler.
