- 1/2 cups Butter, Room Temperature
- 2 teaspoons Lemon Juice
- 3/4 cups Sugar, Plus 1 Tablespoon For Sprinkling
- 1 whole Egg
- 1 teaspoon Vanilla
- 2 cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Sea Salt
- 1/2 cups Buttermilk
- 2 cups Fresh Blueberries, Plus Extra For Topping
- Whipped Cream For Topping

1Preheat the oven to 350 F. Grease a 9x9 or 7x11 baking dish and set it aside.

2In the bowl of a stand mixer, cream together the butter, lemon juice and 3/4 cup sugar until light and fluffy. Beat in the egg and vanilla until well combined. Set aside.

3Combine the flour, baking powder and salt in a small bowl. Add the flour mixture a little at a time to the butter mixture, alternating with the buttermilk. Fold in the blueberries.

4Spread the batter into the prepared baking dish and sprinkle with the remaining 1 tablespoon of sugar.

5Bake for 30 to 40 minutes, testing after 30 minutes. Cool before serving. Top with whipped cream and fresh berries.
