Sunday Spinach Salad

  • 8 slices bacon, cooked crisp and crumbled
  • 1 qt. washed, torn spinach
  • 2 c. sliced mushrooms
  • 1 c. red onion rings
  • 1 (10 oz.) pkg. frozen peas, uncooked
  • 1 c. mayonnaise
  • 1/2 tsp. sugar
  • 1 tsp. curry powder
  • dash of pepper

Directions

    Remove stems from spinach.

    Layer spinach, mushrooms, onion and frozen peas in a large bowl.

    Mix mayonnaise, sugar, pepper and curry powder. Top salad with this mixture.

    Cover with foil and refrigerate overnight.

    Mix and top with bacon before serving. Makes 8 servings.
