  • 8 eggs, separated
  • 2 c. sugar
  • 1 3/4 c. sifted cake flour
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt
  • 2 tsp. vanilla
  • 1 tsp. lemon or orange flavoring
  • 2/3 c. water

Directions

    Beat cream of tartar, salt, vanilla and lemon or orange with egg whites until stiff.

    Slowly beat in 1 cup of sugar.

    Set aside. Beat egg yolks until quite light in color.
  4. 4
    Slowly beat in remaining sugar.
  5. 5
    Blend flour alternately with water.

    Fold into beaten egg white mixture with large spoon.

    Pour into ungreased tube pan and bake in center of oven for 60 minutes at 325°, then turn oven to 350° for 20 minutes.

    Remove from oven and invert on cake rack to cool in pan.
