Ingredients
- 1 1/4 c. sugar
- 1 c. pastry or soft wheat flour
- 3/4 c. egg whites (from 6 or 7 eggs)
- 3/4 tsp. cream of tartar
- 1/2 tsp. salt
- 1/2 c. egg yolks (4 or 5 eggs)
- 1 tsp. vanilla or orange extract
Directions

1Sift both sugar and flour before measuring.

2Sift flour four times after measuring.

3In a mixing bowl put the egg whites, cream of tartar and salt.

4Beat the mixture until it is stiff.

5In another bowl beat the egg yolks until they are light in color. Through a sifter add sugar to the egg whites and fold the sugar into the eggs.

6Then fold the beaten egg yolks into the sugar and egg white mixture.

7Add the flavoring.

8Through a sifter add the flour to the other ingredients and fold it into them.

9Turn into an ungreased deep tube cake pan.

10Bake at 325° for one hour.

11When cake is removed from oven, place it, inverted, on a cake cooler until cold.
