- 7 or 8 medium carrots, bias sliced 1/2-inch thick
- 1 Tbsp. brown sugar
- 1 tsp. cornstarch
- 1/4 tsp. ground ginger
- 1/4 tsp. salt
- 1/4 c. orange juice
- 2 Tbsp. butter
Directions

1In a saucepan, cook carrots in boiling salted water for 10 to 15 minutes; drain.

2In saucepan, mix brown sugar, cornstarch, ginger and salt.

3Stir in orange juice; cook and stir until mixture is thickened.

4Boil 1 minute; remove from heat.

5Stir in butter.

6Toss with hot carrots.

7Top with parsley and an orange slice, if desired.

8Makes 6 servings.
