  • 1- 1/4 cup Rice
  • 1 pound Lean Sausage
  • 5 whole Eggs, Beaten
  • 2- 1/2 cups Milk
  • 1 can Cream Of Mushroom Soup
  • 1 can Sliced Mushrooms, Drained
  • 1/2 teaspoons Dry Mustard
  • 2 cups Shredded Cheddar Cheese

Directions

    Cook sausage until browned, drain well.

    Crumble it into a lightly greased 9x13x2 inch baking dish.

    In separate bowl, combine eggs and milk, mix well.

    Add soup, mushrooms, rice, and dry mustard to the egg mixture.

    Blend well.

    Pour liquid over the sausage, distributing rice as evenly as possible.

    Cover and refrigerate overnight or at least 8 hours.

    Remove from fridge and bake covered at 350 degrees for 35 minutes.

    Remove cover and bake an additional 45 minutes.

    Sprinkle cheese over the top and bake another 5 to 10 minutes.

    You can use half of the cheese in the egg mixture, and half on top, if desired.
