Super Duper Potatoes

- 9 medium potatoes
- 1/2 c. margarine
- 2 c. half and half
- 1 Tbsp. salt
- 1/2 lb. shredded Cheddar cheese (8 oz.)
Directions

1Cook potatoes in their jackets until tender (better to undercook than to overcook).

2Put into refrigerator and chill for 24 hours.

3Warm in saucepan the margarine, half and half and salt. Peel potatoes and grate into large bowl.

4Pour half and half mixture over potatoes; add cheese.

5Mix together and put into a 9 x 13-inch ungreased baking dish.

6Bake at 350° for 1 hour, uncovered.
