  • 1 tbsp. olive oil
  • 4 celery stalks
  • 1 medium onion
  • 1 package seasoned black beans and rice mix
  • 1 can 19 ounces
  • 3 medium tomatoes
  • 4 oz. deli ham in 1 piece
  • 1/4 c. chopped fresh cilantro leaves
  • 2 tbsp. fresh lime juice
  • cilantro sprigs

Directions

    In deep nonstick 12-inch skillet, heat oil over medium heat until hot.

    Add celery and onion and cook, covered, 7 to 8 minutes or until tender and lightly browned, stirring occasionally.

    Add beans and rice mix, soup, 1 cup chopped tomatoes, and 2 cups water; heat to boiling over medium-high heat.

    Reduce heat to low; cover and simmer 20 to 25 minutes or until rice is tender.

    Stir in ham, cilantro, and lime juice.

    To serve, ladle into bowls and top with remaining chopped tomatoes; garnish with cilantro sprigs.
