- 6 ounces, weight Soba Noodles
- 2 Tablespoons Creamy Peanut Butter
- 2 Tablespoons Hot Water
- 1 teaspoon Tamari Or Soy Sauce
- 1 teaspoon Fish Sauce
- 1/4 cups Chopped Green Onion
- 1 whole Lime, Juice And Zest, Divided
- 1/4 cups Crushed Peanuts
Directions

1Boil soba noodles in hot water until tender.

2Drain and set aside.

3In a mixing bowl, combine peanut butter, hot water, tamari, fish sauce, onions, and half of the lime juice and zest.

4Whisk together.

5Add the cooked soba noodles and toss until the noodles are well coated.

6Divide noodles among two serving bowls.

7Top with peanuts and the remaining lime juice.

8Garnish with remaining lime zest and a wedge of lime (or more green onion!)

10Serve right away so that the peanut sauce stays creamy.
