- 3 lbs chicken (cut into bite-sized pieces)
- 2 garlic cloves (more, to taste)
- 1 medium onion
- 2 tablespoons masala (store-bought, your own recipe or Recipe #82968 or Recipe #174350) or 2 tablespoons curry powder (store-bought, your own recipe or Quick Garam Masala or Hot Madras Curry Powder)
- 4 tablespoons sunflower oil or 4 tablespoons corn oil
- chili peppers (optional) or jalapeno, to taste (optional)
- 1/2 teaspoon sugar
- salt, to taste
- water
Directions

1Heat the oil; add the onion and garlic, fry until translucent (take care not to scorch)

2Add the masala powder or curry powder and stir in well.

3Add the chicken with the peppers, sugar and salt (to taste)

4Stir well until chicken is coated with onion/garlic mixture; add just enough water to cover the chicken.

5Cover and cook over medium heat until tender.
