  • 1-1/2 cup Flour
  • 1/3 cups Sugar
  • 1 Tablespoon Baking Powder
  • 1/4 teaspoons Salt
  • 2 cups Corn Flakes
  • 1 cup Skim Milk
  • 1 whole Large Egg
  • 1/4 cups Vegetable Oil
  • 12 teaspoons Strawberry Preserves Or Fruit Preserves Of Choice

    Preheat oven to 400°F. Line a 12-muffin pan with paper liners or spray pan with cooking oil.

    Stir together flour, sugar, baking powder and salt. Set aside.

    In a large bowl, combine corn flakes and milk. Let rest 2-3 minutes.

    Add egg and oil to corn flake mixture, beating well. Add flour mixture, stirring until just moistened.

    Portion half of the batter evenly into prepared muffin pan or muffin papers. Put 1 teaspoon fruit preserves of choice on top of each muffin batter. Evenly distribute remaining batter to each muffin, covering preserves.

    Bake at 400°F about 18 minutes or until golden brown. Serve warm with cream cheese, butter or honey.
