Swamp Rice

  • 1/2 to 3/4 lb. bulk breakfast sausage
  • 1 pkg. Uncle Ben's long grain and wild rice mix
  • 1 can minced mushrooms
  • 1 can chicken broth
  • 1/2 medium onion, minced
  • 1 1/2 Tbsp. flour

Directions

    Fry out the sausage.

    Cook rice per directions on box.

    Drain excess fat from sausage and set aside.
  4. 4
    In small amount of fat remaining, saute the onions until tender.
  5. 5
    Add flour to onions and stir to moisten, not brown.
  6. 6
    Add chicken broth and juice from the mushrooms to the mixture in the frying pan, stirring constantly until gravy consistency.

    Mix rice, mushrooms, sausage and gravy thoroughly.

    Bake at 350° for 1/2 hour in casserole dish.

    May be topped with slivered almonds.
