Swedish Beef Stew

  • 2 lb. beef stew, dredged with flour
  • 3 Tbsp. margarine
  • 2 Tbsp. butter
  • 1 large onion, chopped
  • 1 1/4 c. fresh brewed coffee
  • 1 1/4 c. beef stock
  • 2 Tbsp. brown sugar
  • 2 small tins anchovies, chopped
  • salt and pepper
  • 1/2 tsp. allspice
  • 3 Tbsp. flour mixed with 2 Tbsp. water to thicken stew

Directions

    In heated Dutch oven, melt butter and 2 tablespoons margarine. Brown the beef.

    Remove meat, add 1 tablespoon margarine and cook chopped onion 10 minutes.

    Add coffee, broth, brown sugar and anchovies.

    Bring to a boil.

    Add meat and spices.

    Reduce heat and simmer, covered, for 2 hours.

    Thicken with flour-water paste. Serves 4.
