  • 2 1/16 tablespoons fresh yeast
  • 25 ounces cold water
  • 75 cream fresh
  • 9/16 tablespoon salt
  • 3/4 tablespoon sugar
  • 4 cups white flour
  • 1 cup rye flour

    In a bowl, add the crumbled yeast, 25 ounces of cold water, cream, salt, and sugar. Mix well and let rest for 1 hour.

    Add the flours, and use an electric mixer to mix for 7 to 8 minutes until a smooth dough.

    Cover the dough with plastic wrap and refrigerate for 50 minutes. The dough will rise.

    On a floured surface, roll out the dough to 3 millimeters thick and spread on a baking sheet lined with parchment paper. Prick the dough with a fork. Cover with plastic wrap and refrigerate for another 10 minutes. The dough should not be too thick, because the biscuits will swell during cooking.

    Cut out shapes with a cookie cutter, prick the dough again, and let stand for about 30 minutes.

    Heat a frying pan without grease, and fry the biscuits for 3 minutes on each side.
