Ingredients
- 2 green onions, thinly sliced
- 1 tsp. vegetable oil
- 1 c. reduced sodium chicken broth
- 1 lb. shrimp, shelled and deveined
- 2 Tbsp. reduced fat sour cream
- 2 Tbsp. Dijon style mustard
- 1 tsp. cornstarch
- 1 tsp. pepper
- 1/4 c. chopped fresh dill
- 1/2 tsp. fresh lemon juice
Directions

1Saute onions in oil in a nonstick skillet to soften, 2 minutes.

2Add 1/4 cup broth, bring to a boil.

3Add shrimp. Reduce heat; simmer, covered, until shrimp are pink, 3 minutes. Whisk together 1/4 cup broth, sour cream, mustard and cornstarch in cup until smooth.

4Whisk into skillet.

5Cook, stirring, to thicken.

6Add pepper, dill and lemon juice.
