Swedish Shrimp

Ingredients

  • 2 green onions, thinly sliced
  • 1 tsp. vegetable oil
  • 1 c. reduced sodium chicken broth
  • 1 lb. shrimp, shelled and deveined
  • 2 Tbsp. reduced fat sour cream
  • 2 Tbsp. Dijon style mustard
  • 1 tsp. cornstarch
  • 1 tsp. pepper
  • 1/4 c. chopped fresh dill
  • 1/2 tsp. fresh lemon juice

Directions

    Saute onions in oil in a nonstick skillet to soften, 2 minutes.

    Add 1/4 cup broth, bring to a boil.

    Add shrimp. Reduce heat; simmer, covered, until shrimp are pink, 3 minutes. Whisk together 1/4 cup broth, sour cream, mustard and cornstarch in cup until smooth.

    Whisk into skillet.

    Cook, stirring, to thicken.

    Add pepper, dill and lemon juice.
