- 1 cup self-rising flour
- 1/2 cup brown sugar
- 2 ounces desiccated coconut
- 1/2 cup butter melted
- 2 limes zested and juiced + extra lime zest, to decorate
- 4 egg yolks
- 13 1/2 ounces sweetened condensed milk
- whipped cream to serve
Directions

1Preheat oven to 350°F. Lightly grease a 9 1/2 inch tart pan with a removeable base. Combine flour, sugar, coconut and butter. Press firmly into base and sides of pan. Place on a baking tray and bake for 10-12 mins. Let cool.

2Once cool, whisk lime zest and juice, egg yolks and sweetened condensed milk until smooth. Transfer to prepared shell and bake for 10-12 mins, until just set. Chill for 3 hours, or overnight. Sprinkle with extra zest and serve with whipped cream.
