  • 5 pounds honey
  • 1 lemon juice table spoon, or orange juice
  • 1 package champagne yeast
  • water

Directions

    put honey with an equal amount of water in a pan. Heat to just below a boil. skim off foam until foam changes from yellow to white. them turn off heat.

    Cover pan and allow to cool

    after mix has cooled add lemon or orange juice.

    pour mix into 1 gallon glass carboy and add water to bring volume to one gallon

    add yeast and seal carboy with fermentation lock.

    place carboy in dark location with a steady temperature.

    allow mix to ferment until there are no bubbles coming out the fermentation lock. This will take 2 to 6 months.

    allow bottles to age for at least one year
