  • 2 (12 oz.) cans corn (frozen can be used)
  • 1/2 c. diced green pepper
  • 1/2 c. diced red pepper or tomatoes
  • 1/2 to 1 c. sweet onion, chopped
  • 3 packets sweetener (Splenda works best)
  • salt to taste
  • pepper to taste
  • 4 Tbsp. butter

    Drain corn well.

    Melt butter in skillet (cast-iron works best).

    Add corn, green pepper, red pepper or tomatoes, onion, salt and pepper.

    Cook until all liquid has cooked out.

    Stir frequently.

    Add sweetener and serve.
