Sweet Pickled Beets

- 1 (10 qt.) bucket beets (1-inch tops and roots left on to cook)
- 6 c. vinegar
- 3 c. sugar
- 3 Tbsp. mixed pickling spices, tied in a cloth bag
Directions

1Boil the beets until tender, about 2 hours.

2Remove them from heat and peel.

3Slice 1/4-inch slices.

4Put the vinegar, sugar and spice bag in a kettle and boil for a few minutes or until sugar is well dissolved.

5Add the beets to the syrup and bring it back to the boiling point.

6Remove from heat.

7Pack while hot in sterilized jars and seal.

8Makes about 8 or 9 pints.
