Sweet Potato and Spinach Hash

  • 2 Large Sweet Potatoes, Diced
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion, Diced
  • 1 pound Pre-Cooked Sausage, Diced (I Used An Apple/chicken Blend)
  • 1 bunch Spinach, Chopped
  • 1/4 cups Chicken Broth
  • 1/2 teaspoons Garlic Powder
  • 1/4 teaspoons Crushed Red Pepper Flakes
  • Salt And Pepper
  • Red Wine Vinegar, To Taste

Directions

    Put the sweet potatoes, butter and olive oil in a large pan over medium heat and cook until the potatoes soften a bit, about 7-10 minutes.

    Season with salt and pepper to taste.

    Add the onion and saute for another 2-3 minutes.

    Add the sausage and keep stirring for another 2 minutes.

    Then add the chopped spinach and chicken broth to it and carefully mix the hash together until the spinach is wilted and everything is hot, another 5 minutes.

    Add the garlic powder and red pepper flakes, as well as a few dashes of red wine vinegar to your own taste.
