Sweet Potato Biscuits

Ingredients

  • 4 c. all-purpose flour
  • 2 Tbsp. baking powder
  • 2 tsp. salt
  • 1 c. butter or margarine
  • 1 c. mashed sweet potato, cooked
  • 1/2 c. sour cream (fat-free may be used)
  • 1/2 c. buttermilk (fat-free may be used)

Directions

    Combine first 3 ingredients.

    Cut in butter until crumbly. Stir together sweet potato, sour cream and buttermilk; add to dry ingredients, stirring just until moistened.

    Turn dough out onto a lightly floured surface, and knead 3 or 4 times.

    Pat or roll to 1/2 inch thickness.

    Cut dough with a 3 inch round cutter, and place biscuits on a lightly greased baking sheet.

    Bake at 400° for 15 to 20 minutes or until golden brown.

    Makes 14 biscuits.
