- 4 c. all-purpose flour
- 2 Tbsp. baking powder
- 2 tsp. salt
- 1 c. butter or margarine
- 1 c. mashed sweet potato, cooked
- 1/2 c. sour cream (fat-free may be used)
- 1/2 c. buttermilk (fat-free may be used)
Directions

1Combine first 3 ingredients.

2Cut in butter until crumbly. Stir together sweet potato, sour cream and buttermilk; add to dry ingredients, stirring just until moistened.

3Turn dough out onto a lightly floured surface, and knead 3 or 4 times.

4Pat or roll to 1/2 inch thickness.

5Cut dough with a 3 inch round cutter, and place biscuits on a lightly greased baking sheet.

6Bake at 400° for 15 to 20 minutes or until golden brown.

7Makes 14 biscuits.
