- 2 c. flour
- 3/4 c. sugar
- 1/2 c. pecans
- 2 eggs, beaten
- 1 c. mashed cooked sweet potatoes
- 1/2 c. milk
- 3 Tbsp. shortening, melted
- 6 pecan halves
Directions

1Heat oven to 350°.

2Grease a 4 1/2 x 6 1/2-inch loaf pan.

3Mix flour and sugar.

4Stir in pecans.

5Blend eggs, potatoes, milk and shortening.

6Add liquid mixture to flour mixture.

7Stir until blended.

8Pour into pan.

9Press pecan halves in top of batter. Bake 1 hour and 10 minutes.

10Cool 10 minutes before removing from pan.
