- 1 1/2 c. salad oil
- 2 c. sugar
- 4 eggs, separated
- 2 c. all-purpose flour
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 4 Tbsp. hot water
- 3 tsp. baking powder
- 1/2 c. grated sweet potatoes
- 1 c. chopped nuts
- 1 tsp. vanilla
Directions

1Combine oil and sugar.

2Beat until smooth.

3Add egg yolks and beat.

4Add hot water, then dry ingredients.

5Stir in sweet potatoes, nuts and vanilla.

6Beat.

7Beat egg whites until stiff and fold into mixture.

8Bake in 3 (8-inch) pans at 350° for 25 to 30 minutes.
