Sweet Potato Grits

- 2 cup water
- 2 cup milk
- 2 medium sweet potatos, peeled & grated
- 1 cup stone-ground grits
- 1 coarse salt and freshly ground white pepper- to taste
- 1/4 tsp ground ginger
- 1 pinch ground cinnamon - to taste
- 1 tbsp unsalted butter
Directions

1In a large, heavy saucepan, combine the water & milk and bring to a gentle boil over medium-high heat.

2Slowly add the grits, whisking constanly.

3Add sweet potato, season with salt & pepper.

4Decrease heat to low and simmer, stirring often, until the grits are creamy & thick - 45 to 60 minutes.

5Taste the grits and sweet potato to make sure both are cooked and tender.

6Add the ginger, cimnamon and butter (I added an extra tablespoon of butter).

7Taste and adjust for seasoning with salt and pepper.

8Serve immediately.
