Sweet Potato Pie

  • 1 c. cooked, mashed sweet potato
  • 1 1/2 c. sugar
  • 1 1/3 c. milk
  • 3 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. ginger
  • 1/3 c. bourbon whiskey (gives a mellow taste)
  • 1 Tbsp. butter

Directions

    Boil potatoes in their skins until tender.

    Cool, peel and mash.

    Beat in eggs, sugar and remaining ingredients.

    Pour into 9-inch unbaked pastry shell.

    Bake at 350° for 1 hour.

    Serve warm with cream.

    Can be doubled for 2 pies (except bourbon; use 1/2 cup).
