  • 2 (1 lb. 7 oz.) cans sweet potatoes
  • 4 c. sugar
  • 1 large can evaporated milk
  • 1 c. coconut
  • 2 medium cans crushed pineapple
  • 2 (8 oz.) jars maraschino cherries
  • 6 Tbsp. cornstarch
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. salt

Directions

    Combine and beat sweet potatoes, 2 cups sugar, eggs, milk, vanilla, coconut and salt.

    Bake for 25 to 30 minutes at 350°. Cook until glossy.

    Combine pineapple, cherries and juice, 2 cups sugar and cornstarch; pour over potatoes.

    Return to oven for 10 minutes.
