- 2 (1 lb. 7 oz.) cans sweet potatoes
- 4 c. sugar
- 1 large can evaporated milk
- 1 c. coconut
- 2 medium cans crushed pineapple
- 2 (8 oz.) jars maraschino cherries
- 6 Tbsp. cornstarch
- 2 eggs
- 2 tsp. vanilla
- 1 tsp. salt
Directions

1Combine and beat sweet potatoes, 2 cups sugar, eggs, milk, vanilla, coconut and salt.

2Bake for 25 to 30 minutes at 350°. Cook until glossy.

3Combine pineapple, cherries and juice, 2 cups sugar and cornstarch; pour over potatoes.

4Return to oven for 10 minutes.
