Sweet Sour Cabbage

- 1 medium head cabbage
- 2 onions
- 2 Tbsp. vinegar
- 2 tart apples
- 4 slices bacon
- 1 Tbsp. flour
- 1 Tbsp. sugar
- salt and pepper to taste
Directions

1Shred cabbage.

2Chop onions fine.

3Combine with 2 tablespoons salt.

4Let stand 1 hour.

5Squeeze out liquid.

6Cover with boiling water and let stand 10 minutes. Drain.

7Chop apples. Add cabbage, vinegar and sugar. Cover with water. Cook until tender.

8Fry bacon until crisp.

9Make roux of bacon and 2 tablespoons flour (until browned).

10Add 1 cup cabbage liquid. Stir until smooth.

11Crumble bacon on top.
