- pastry for 1 pie crust
- 1 tbsp. butter, softened
- 4 eggs
- 2 cups heavy or whipping cream
- 3/4 tsp. salt
- 1/4 lb. natural Swiss cheese, shredded
Directions

1Preheat oven to 425°.

2Line one 9 inch pie plate with pastry. Spread crust evenly with softened butter; chill well.

3With wire whisk, beat eggs. cream and salt.

4Stir in cheese.

5Pour egg mixture into crust.

6Bake 15 minutes; turn oven to 325°.

7Bake 35 minutes.

8Quiche is done when knife inserted in center comes out clean.

9Let stand 10 minutes before serving.
