- 1 large Idaho potato per person
- cold water
- 2 tsp. butter per person
- salt
- pepper
- onions, browned (optional)
Directions

1Coarsely grate the potatoes into a dish of cold water.

2Brown butter lightly in a large heavy pan.

3Blot potatoes on a towel to dry them.

4Add to hot butter and press firmly with a broad spatula.

5Reduce heat and sprinkle salt and pepper to taste.

6Cook covered for about 15 to 20 minutes, until bottom of potatoes are cooked and golden brown.

7Turn into a hot serving plate, crusty side up.

8Serve immediately.
