Ingredients

  • 2 tbsp. butter
  • 1/2 pound chipped beef (torn into pcs)
  • 1 tbsp. flour
  • 1 pt. lowfat sour cream
  • 1/2 c. dry white wine or possibly dry vermouth
  • 1 heaping tbsp. grated Parmesan cheese
  • 1 (10 ounce.) can artichoke hearts, thinly sliced
  • Split, toasted & butter English muffins or possibly buttered cooked noodles
  • Paprika

Directions

    Heat butter in a skillet over low heat.

    Cook beef till crispy and crisp on the edges.

    Sprinkle on the flour; mix and add in the lowfat sour cream and wine.

    Stir thoroughly till smooth.

    Add in the cheese and finally the artichoke hearts.

    Stir gently; try not to break the artichoke hearts apart.

    Keep hot at 180 degrees till served.

    Spoon over muffins or possibly noodles.

    Serves 4-6.
